General comment Coconut_reception_selection_extraction_water_processing
The primary data were collected in a coconut water processing company in the Paraipaba region of CearĂ¡, from 2019 to 2020, , through interviews and questionnaire filling.
In the reception stage, the coconuts arrive at the industry, in bulk, in trucks. Initially, a sample is taken from the fruit to verify the quality by examining the degree of ripeness and size. The coconuts with adequate quality are unloaded and placed on a conveyor belt where they go through a visual inspection by trained employees to be selected.
The selected coconuts, before proceeding to process, are washed with drinking water, characterizing a pre-wash, then they are sanitized with a chlorinated solution with a concentration of 1% and then rinsed with drinking water. The water used in the processing is included in the quantitaty reported in the Coconut_cleaning__and_space_processing
After being sanitized, the coconuts are sent to the extraction process where the water and the coconut husk are separated and then processed in different ways.
